Ippudo Mohamed Sultan – keep changing to remain unchanged

Hakata Ippudo started in Fukuoka, Japan in 1985 and now Ippudo restaurants span the globe – from New York City, London and Paris to Shanghai, Bangkok and Sydney. Ippudo opened its first outlet in Singapore at Mandarin Gallery in 2009. Ippudo Tao was opened in 2010 in UE Square along Mohamed Sultan Road and was later re-branded as Ippudo SG @ Mohamed Sultan. Today, there are 7 Ippudo restaurants in Singapore and the one in UE Square is simply refer to as Ippudo Mohamed Sultan. Like its name, the interior of Ippudo Mohamed Sultan has undergone changes over the years and so has its menu. Perhaps all that is in line with the Ippudo’s philosophy of “keep changing to remain unchanged”.

Ippudo Mohamed Sultan has an outdoor seating area and a compact indoor dining hall. There regular dining tables as well as bar counter seats facing the open kitchen.

Dinner at Ippudo UE Square

We had dinner at Ippudo Mohamed Sultan in UE Square recently. We started with edamane ($5) and Fried Tofu ($8); and ordered the Shriromaru Special Ramen ($21) and the Singapore Special Kuro Ramen with Tamago ($21).

The edamane was served hot. The lightly salted beans were nice and satisfying. The fried tofu was surprisingly good – the topping of vegetables and minced meat and the delicious sauce made the simple tofu dish a really enjoyable one.

Ramen

Shriromaru Special Ramen

The Shriromaru Special Ramen looked plain and simple. The creamy tonkotsu broth was light and rich in flavours at the same time. Served with thin and straight noodles, pork belly, pork loin, seaweed and umami egg, it was a classic bowl of ramen of the expected high standard of Ippudo.

The Kuro Ramen was Ippudo’s thick and chewy ramen in their original tonkatsu broth with a special miso paste. There were black fungus and spring onions in the broth which looked black and thick and rather messy. It was very rich, slightly spicy and very flavourful. Those who might find the classic Hakata ramen a tad bland should find their palate excited by the Kuro Ramen.

Same Good Food

Ippudo has a knack for changing things around and creating fresh variations and yet keeping fairly consistent standards in terms of quality and palatability. Their philosophy of “keep changing to remain unchanged” should keep customers going back to Ippudo, whether they want the Ippudo classic standard ramen, something light in flavour like the classic Shriromaru Special Ramen or something really robust and different like the Kuro Ramen.

Ippudo Mohamed Sultan is also a place to remember if you have a ramen craving late at night as it stays open till very late (or early) – up to 2 am on Friday.
