Fortune Centre, known for its vegetarian eateries and feng shui product retailers, is turning into an interesting dining destination. Among the new stylish F&B establishments that are in the ageing building now is a small Japanese bakery – Tsumiki Bake. The hole-in-the-wall shop seems to have become a favourite among the Japanese expatriates.

When we visited Fortune Centre recently, the queue of customers, predominantly Japanese women, outside a small shop caught our attention. Going nearer, we saw a simple sign which proclaimed “Authentic Japanese Bread Hand-made by a Japanese Baker”.

Tsumiki Bake operates as a takeaway-only kiosk. The menu is limited but changes regularly, offering freshly baked goods made with premium ingredients. The bakery’s offerings include shokupan (Japanese milk bread), sweet bread, and sourdough.

Tsumiki’s sourdough is a signature item. It features a slightly burnt crust and is made with 50% French premium T80 flour. Another popular choice is the Rosemary Focaccia, which combines premium French T80 flour with extra virgin olive oil and honey.
For those with a sweet tooth, the Anko Shokupan is worth sampling. It features a sweet paste made from Hokkaido red beans.

We tried the Almond Cream Raisin Shokupan ($2.50 for a slice or $6 for a loaf). The fluffy bread had a rich, buttery flavour with hints of almond. Golden raisins add a pleasant tartness. The unique taste set it apart from typical bread, offering a luxurious experience.
It was not cheap but well worth the price. We enjoyed it and would gladly buy it again.
The Baker’s Story

The story behind Tsumiki Bake is interesting. As reported in 8Days, the bakery is the brainchild of Ms. Waki Yoneoka, a Japan-born INSEAD MBA graduate. Retrenched from her managing director position at a Singaporean fintech firm, Ms. Yoneoka turned to baking. We are sorry that Ms Waki Yoneoka was retrenched but we are very happy she opened Tsumiki Bake to sell “high-quality Japanese bread handmade in small batches”.
We will be visiting in Fortune Centre more often.
