One Holland Village is a new mixed-use development in vibrant Holland Village comprising residences, serviced residences, mall and offices. The new restaurants in One Holland Village will include Ginkyō by Kinki, Fireplace by Bedrock and Din Tai Fung.
Ginkyō by Kinki
Ginkyō (pronounced as ‘Geen-keo’) is the latest concept by the people behind Kinki Restaurant + Bar located at Customs House. The new modern Japanese bistro offers a Japanese dining experience with a playful blend of authenticity and contemporary creativity.
Head Chef Terence Ong brings his knack for creative Japanese fare to serve a menu that injects vibrant global flavours into Japanese favourites. Made for sharing are an array of small plates, baos, and sticks, and Ginkyō’s exclusive Rice Crispies. There are also varied preparations of sashimi and raw fish and makis. Hearty mains, from indulgent proteins to comforting rice bowls, further add variety of the menu of Ginkyō by Kinki.
The Mains include the moreish Okonomi-Rosti ($28) which is a quirky take on the traditional okonomiyaki with shredded potatoes as the base instead of a pancake; the Miso Char Siew ($24) with Kurobuta pork and spicy honey miso, as well as the Squirrel Fish ($48) featuring a deep-fried catch of the day seasoned with paprika garlic miso. For meat lovers, Curry Miso Lamb ($42) will satiate with its presentation of tender New Zealand Coastal lamb racks cured and marinated overnight with koji and curry miso, served with a rich cauliflower hummus and charred asparagus.

Bedrock unveils a fresh open wood-fired grill concept – Fireplace by Bedrock. Nestled within the new One Holland Village, Fireplace is designed to draw diners with a welcoming warmth and conviviality, melding the charm of age-old elemental cooking with the elegance of sleek modernity.
One of the exciting new restaurants in One Holland Village, Fireplace invites guests to a sensorial experience. A gallery of meat, seafood, and other ingredients in a glass-encased showcase makes a captivating display for patrons as they step through the entrance. Within the main dining room, an open-kitchen anchors the space, offering all diners a mesmerising view of chefs deftly working at an open wood-fire grill.
A compact yet versatile menu – spanning appetisers, mains, and desserts, all prepared on an open wood-fire grill – is curated by the culinary team helmed by Chef Victor Ng. The vibrant main courses include the Dirty Duck ($48++): an Irish duck rubbed with a medley of aromatic spices such as coriander powder, Sichuan peppercorn, and cumin powder, sous vide and then finished on the grill upon order; and The Honey Orange Jurassic Quail ($38++) – an Australian bird larger than most quails, which will be marinated with orange and honey glaze for at least a day before being grilled till succulent upon order. There are also grilled Lamb Ribs (300g/$48++), the 6 Hours Wood-Fired Crispy Pork Belly ($35++ for 200g / $48++ for 300g), Wagyu Tomahawk Steak (market price), the 8 Hours Wood-Fired Roasted Whole Lamb ($38 for 200g / $50 for 300g) and Half Suckling Pig ($240++).
Fireplace by Bedrock also offers an enticing Set Lunch Menu (from $32++) and a Kid’s Menu.

Baker’s Brew opens its new pet-friendly café, Plain Meredith in One Holland Village.
Plain Meredith promises varied cafe fare. On the menu are items such as Steak and Eggs, In-house special Meredith Salad and Plain Meredith Burger, Tagliatelle Lamb Ragu and French Toast with caramelized bananas, berries and walnuts.
There is a specially crafted menu for pets. A unique pet treats corner allows pet owners to scoop out tailor-made goodies for their pets.
