Sentosa Cove, with its marina and waterfront promenade, provides a unique setting for dining in Singapore. In this scenic spot, Sabio by the Sea at Quayside Isle offers a taste of Spain. It is an offshoot of the original Sabio, which has been serving tapas in Singapore since 2011. This Spanish restaurant in Sentosa combines traditional Spanish sharing plates with the laid-back atmosphere of a coastal location.

Located at Quayside Isle, this Spanish restaurant in Sentosa offers a casual waterfront space will million dollar views. Diners can watch luxury yachts in the marina whilst sharing plates of traditional tapas.

Sabio has a covered outdoor terrace. Patrons can enjoy the open-air environment and views of the marina without being overly exposed to the elements, a practical consideration in Singapore’s tropical climate.
The interior design makes use of a colour palette that creates an atmosphere that feels Spanish and festive. A dramatic coral-pink accent wall is decorated with large contemporary artworks that blend geometric patterns with cultural motifs. Chandeliers provide sculptural interest overhead.

The communal seating arrangement encourages interaction among diners, which is reflective of Spanish tapas traditions.
Menu of Sabio by the Sea
The menu of Sabio by the Sea Sabio by the Sea’s menu offers an extensive selections of both hot and cold tapas like Patatas Bravas and Jamón Ibérico. A dedicated Josper Grill section features charcoal-cooked meats and seafood, as well as various paella options. The menu is rounded out with classic starters, skewers, sides, and traditional Spanish desserts.

Dinner at Sabio Spanish restaurant in Sentosa

Our recent visit provided an opportunity to sample a selection of dishes. The Calamares Fritos ($19) offered a familiar start. They arrives as perfectly golden rings with a light, crispy coating that did not overwhelm the tender squid beneath
The Spanish Lamb Skewers ($10 each), presented well-seasoned meat with capsicum and onion. The meat retained its juiciness despite the high-heat grilling required for proper char.


El Pulpo ($34) from the Josper Grill section did not look very good but was delicious. The grilled octopus, served with “Viola” mash potato and paprika, was tender rather than chewy. There was a subtle smokiness.
The Chuleta de Cerdo ($38), a 300g tender grilled pork chop glazed with quince paste, demonstrated the versatility of the Josper Grill. The generous cut was grilled just right and remained tender throughout. The quince glaze ( sweet, thick, jelly-like preserve) offered a sweet-tart contrast to the richness of the pork.


The Paella de Pescado ($38) combined squid, sea bass, mussels and shrimps in perfectly cooked rice that maintained individual grain texture whilst absorbing the complex seafood flavours. It was a dish that was not dramatic but very enjoyable.

Food that makes the trip worthwhile
Sabio by the Sea focuses on doing classic Spanish dishes well. It creates a relaxed setting that encourages the social style of eating that is important in Spanish culture. For diners looking to escape Singapore busy dining spots, this Spanish restaurant in Sentosa offers space, scenic views, and food that makes the trip worthwhile.
